Tunworth and Salami Tart

Cheddar Pastry

100g Plain Flour
100g Butter
100g Coastal Cheese (Grated)
1g Cayenne Pepper
1g Salt

 

Method

  1. Combine all ingredients and bring together quickly.
  2. Roll and line tart rings.
  3. Blind Bake the tarts @160oC for 15 minutes.
  4. Remove from oven once golden brown and allow to cool

 

Tart Filling

20g Tunwoth
10g Melted Onions (Sliced Onions softened in butter for 1 hour)
10g Pickled Beetroot
20g Salami
2g Radicchio
2g Frisee
1g Pea Shoots
.5g Chives
Vinaigrette
Salt and Pepper

 

Method

  1. Place Melted Onions into the tart base.
  2. Place Tunworth on Onions.
  3. Place salami on the Cheese
  4. Bake in the oven @ 180oC for 5 minutes.
  5. Remove from oven.
  6. Dress salad leaves and place carefully onto the Tart.

Serve immediately.
